I made Thai food last night- and it turned out DAMN good!
This isn’t an actual picture of mine… although I should have snapped one. I learned last night that Thai Red Curry Chicken is much like ‘chili’– it has infinite variations on a theme. Its sort of a melange that you just concoct– you don’t use a recipe much, other than for the basic foundation. Its fun and creative, and that’s why Thai food is like the new Black (for me).
I have a few set dishes that I can whip up from memory at a moment’s notice (chili being one of them). This will now be added to the arsenal. I started with a recipe search on google for Thai red curry dishes, and then I picked and chose features from different ones that I liked.
For instance, I added onion and bamboo shoots to mine- in addition to a red bell pepper. I also added ginger (which only some recipes called for). The whole thing was like a chemistry experiment, and it turned out well. Ask Jim, he ate two bowls of it!

Evidently these fucking things were featured on Oprah or something. I don’t know. But my father discovered them in a little artistic store in the East Village of Des Moines, and thought I would like them.
And I do.
Mine are a dark greenish-grey color, so much better than that bright green. They could be a tad bigger, but they worked very well for the jasmine rice and Thai curry last night.
Check one thing off my new year’s resolution list, betches.

The bowls are really kick-ass. I’d like to have a bowl of soup on a really cold day and just hold it with one hand and a book with another.

It’s one of my favorite types of food.
‘Nilla please! I have been groovin’ on Thai food for years now. I love it! Panang curry chicken is my favorite, and it doesn’t take that long to make either.
I used to agonize over whether I loved Mexican or Thai food the most. Then I discovered the Thai Burrito.
