Cooking Lessons

Hey- sorry about yesterday’s post. It was meant as sort of a sorbet. A palate cleanser. Only the opposite of that.

Anyway, speaking of palates….

As i was off and didn’t have any plans, I tried cooking something new for dinner last night. It did not go well.

At the farmer’s market this past weekend, I picked up some eggplant. I like eggplant. Eggplant Parmesan. Baba ganouj. Casserole. And I had these eggplants. And some marinara sauce.

So— how best to cook them? Ok, how about slicing them and frying them up in some olive oil? Yeah, that sounds good. Maybe a little salt and garlic on them since I have no egg and panko for breeding them.

Yeah. Not so much.

Eggplants are basically sponges I discovered. And as soon as I dropped the bits in the skillet, they soaked up all the oil.

Long story short, I ended up with soggy, oily discs of eggplant that not even the marinara could make edible.

Lesson learned. I’ll use mom’s casserole recipe from now on.

P.S. What little bit I did eat is sure coming out in a hurry today.

    Yeah – you pretty much have to bread them to make them edible. However you can do this trick. Place sliced eggplant on a platter and salt both sides well. Cover and leave out for about an hour or so. The salt draws all the bitter liquid out.
